On a New Year’s walk with Sustainability Matters’ official spokescat, Haym, we stumbled upon a treasure trove: after months of almost-drought, the rain brought forth mushrooms! We dined on oyster mushrooms, washed down with tea brewed from turkey tail mushrooms and spicebush twigs. Surely a promising sign for the new year.
